In my experience, a horn that comes with the added high F# key tends to play a little wider and fuller than the same horn without the high F# key. Without the high F# key, the tone feels more slender and focused.
I think the best side-by-side comparison is possible only when a sample of new horns of the same brand, model & finish is available. If you have 3 new horns with high F# next to 3 new horns of same brand, model & finish without high F#, then you will get a good idea about how the F# affect sound and response.
We have consistently found the above mentioned differences in playing characteristics to be true on for instance the new Tenor Madness saxophones which are available both with and without high F#.
